Mortens interest for coffee began when his mother went in to the coffee business 5 years ago. He quickly realised that he wanted to work with coffee, and became a barista in a leading danish coffee shop. Here, he spent late hours with his colleuges in the bar discovering new coffees and perfecting the barista craft. The focus on chraftmanship and service was part of the reason that he could suprise everyone at the The Danish Barista Championship 2009 where he won. This send him of to represent Denmark in The World Barista Championships in Atlanta in the summer of 2009. He then spend the rest of 2009 traveling to fairs, competitions and origin to get an insigt in the industry as a whole. He spend the first several months of 2010 at Kaffemisjonen in Bergen where he worked, learned and participated in the training of the staff for the norwegian barista competitions as well as for WBC in London that year.
Specialty coffee came in to Mikkel´s life during his high school years where he started buying green beans, roasting it himself and later grinding and pulling shots as a home barista. His entrance into the specialty coffee industry occurred during a stay in Minnesota (USA) where he worked for a small coffee chain with a Probat shop roaster in each store. This insight into fresh production and serving gave him a different perspective on what coffee could and should be like. When Mikkel returned to Denmark, it was ideal for him to continue working with quality coffee. He started out working as a consultant and freelance-barista for a coffee and machinery importer in Aarhus, where he was involved in staff training, sales, distribution and serving at fairs, conferences and various social events. Later Mikkel sought new challenges working full time at a leading Danish coffee shop where he further developed his skills as a barista. Mikkel is currently one of Denmark's leading baristi and was a member of The Danish National Barista Team of 2008 supported by SCAE (Specialty Coffee Association of Europe).
Morten and Mikkel met each other working in the same coffee shop and quickly found out that they shared visions for specialty coffee and wanted to work with quality coffee in a different, inspiring, creative and more effective way. Complementing each other well as colleagues they saw a possibility to collaborate and get the outmost from each other’s commitment, competences and experiences to create a common consultancy with compiled expertise in an effort to influence the Danish coffee-culture towards higher quality standards.
