We Love The Aeropress!!

The World Aeropress Championship was held in London recently. Marie Hagemeister from Café Europa 1989 in Copenhagen won the competition. Our own Mikkel Pilgaard Madsen competed in the Danish Aeropress Championship prior to the competition in London and suffered defeat to Marie 1 vs. 1. No shame to loose to a World Champ Mikkel!
I had a little talk with her about her recipe after the event. What I noticed was that she wasn't accurate about the parameters of her brew. But she won, and her cups was best in all rounds. All the way from the Danish Championship held in Copenhagen prior to WAC to the final in London. Good judges it was, and all tasting was blind. Her secrets must lie in the brewing method she chooses for specific coffees and/or simply craftwomanship. One of the things we like about the Aeropress is that you can brew coffee in many different ways with it. Some coffees works obviously better with certain parameters. Here is her recipe.
The mandatory coffee used by all competitios was the Ethiopian Yirgacheffe from Square Mile Coffee Roasters.
1. Invert your Aeropress.
2. Grind your coffee fine(20g). Similar to filtergrind on a Mahlkönich Tanzania. (this will be difficult to replicate)
3. Rinse paperfilter.
4. Add 80 degree C water (from The Über Boiler) in cold Aeropress almost to the top.
5. Brewtime 15 - 20 sek. Carefull stirring under the entire brewing process.
6. Press the coffee out of the Aeropress.
